Welcome, "Papa"Joe Botti here, carrying on Chef John's wonderful tradition of supplying you with great recipes and other cooking related features.
John's lovely wife Nancy and his protege` Chef Steve Day will be helping me to keep the site running. 
There is a new page called Friends & Family where we will be adding links to, updates, current news, and other features.  Be sure and check in often because  I'm sure you'll find that it is as fun and interesting and changes often as the rest of Chef John's site.

Here in his own words is a little of Chef John's history,
and what his goals  for this site were.

"My real passion and specialty is Louisiana regional cuisine. I was fortunate enough to receive part of my training in New Orleans where my love affair with Creole and Cajun cooking began.

I would like to pass on the wealth of knowledge and experience I have to people that share my common interest. On this page you'll find great kitchen tips, menus and food news. I'll be sharing many recipes with you for classic dishes, some new ones and variations on good old fashioned home cooking. I have an extensive reference library enabling me to answer any inquiries you may have regarding recipes, food preparation technique and menu planning.  I look forward to your suggestions and value your input".

It is with great regret we have to report the passing of, Chef John Little while on vacation in Las Vegas, Nevada.  There could be no better epitaph than the Stockpot column he sent in just before he left.  There are no words to describe the void he leaves in the lives of his many friends and family.  Goodbye and Godspeed, John.
